Jennifer Becker I disregard the package instructions and use this mix as flour in classic sourdough recipes. For best results, add one cup high protein bread flour to the mix, 0.25 C sourdough starter, 0.25 teaspoon dry yeast and about 3.5 Cups water. Mix and proof overnight in a large covered bowl. Bake in a preheated covered Dutch oven casserole pan. The end result is as close to authentic German bakery bread that we’ve found in the USA. Jan Pedersen Tried three times now. Even bought a 400$ KitchenAid mixer to be able to mix it well and it’s still no taller than 2” and way more compact that it should be. I should know cause I ate this stuff for 25 years in Denmark.
