What is inside a Mozartkugel?
A core of pistachio marzipan, wrapped in a layer of hazelnut nougat, then coated in chocolate. The classic Salzburg version uses dark chocolate; most brands today also sell a milk chocolate coating. The proportions differ by maker, which is why a Reber and a Mirabell taste noticeably different despite the same three components.
What is the difference between Original, Echte and other Mozartkugeln?
The names are legally distinct. Only the Salzburg confectioner Fuerst may call his hand-rolled version the Original Salzburger Mozartkugel. Mirabell produces the Echte Salzburger Mozartkugel in Salzburg by machine, and Reber makes the Echte Reber Mozart-Kugel just over the border in Bad Reichenhall, Germany. All are authentic products with different recipes and price points.
Why are Mozartkugeln wrapped in different colored foils?
The foil identifies the maker at a glance. Mirabell uses silver and blue, Reber uses its distinctive red and gold, and the hand-made Salzburg original comes in silver and blue with a portrait seal. If you have eaten Mozartkugeln in Austria and want the same ones again, the foil color is the quickest way to find them.
