Gelbwurst, the Mild Bavarian Veal Bologna
Gelbwurst is the mild veal and pork bologna of southern Germany — the sausage most German children are raised on. The name means yellow sausage, after the saffron-tinted casing it once carried. It is finely emulsified, seasoned lightly with mace and a hint of lemon, and eaten cold rather than cooked.
Cut it into thick wheels for a Brotzeit board or a soft roll with butter and radishes. It is fully cooked and ready to eat straight from the pack. Pairs well with German mustard and fresh German bread. Browse all our German sausages.
All fresh meat & sausages are prepared according to traditional recipes.
