Leberkäse — also spelled Leberkaese or Leberkas, and called Fleischkäse in parts of southern Germany and Austria — is a Bavarian meat loaf of finely ground pork and beef, seasoned with onion, mace and white pepper. Despite the name, Bavarian Leberkäse contains no liver at all, which is exactly why many regions call it Fleischkaese instead.

Our traditional German Leberkäse — also written Leberkaese or Leberkas, and known across southern Germany and Austria as Fleischkäse or Fleischkaese — is an ultra-premium Bavarian liver cheese made from finely ground pork and lean beef, seasoned with onion, mace and white pepper. It contains no organ meat, no artificial additives and no binders: a clean, dense meat loaf made to the purity standards of the German butcher guilds.

To serve Leberkäse traditionally, cut a thick slice — about half an inch — and pan-sear it in a hot skillet with a touch of butter for 2 to 3 minutes per side until browned and crisp at the edges. Serve it warm inside a crusty roll as a Leberkässemmel with sweet Bavarian mustard, or plate it with a fried egg on top and a side of German potato salad. Cold slices also work straight onto buttered bread.
