gimpyinlincoln My family is from Bavaria. I grew up eating Bavarian potato balls at holidays accompanied by red cabbage, goose, duck, turkey, pork, or roast beef depending on the occasion. They are made of a mixture of boiled potatoes that are riced and raw potates that are grated. The grated potatoes are squeezed in cheese cloth to dispell the liquid from grating. My father did the grating. The packaged potato balls are an acceptable susbstitue for the real thing, but they really aren't quite the same; they are a time saver. I use them because the only time I prepared potato balls by hand was a failure. The balls should be white and “fluffy” and float to the top when boiled. Mine were gray and dense and sank to the bottom of the pot! So, now I use the packaged mix.
