Jennifer Becker I disregard the package instructions and use this mix as flour in classic sourdough recipes. For best results, add one cup high protein bread flour to the mix, 0.25 C sourdough starter, 0.25 teaspoon dry yeast and about 3.5 Cups water. Mix and proof overnight in a large covered bowl. Bake in a preheated covered Dutch oven casserole pan. The end result is as close to authentic German bakery bread that we’ve found in the USA. Follow instructions for no-knead sourdough bread on the Breadtopia website for baking details.

Jan Pedersen Tried three times now. Even bought a 400$ KitchenAid mixer to be able to mix it well and it’s still no taller than 2” and way more compact that it should be. I should know cause I ate this stuff for 25 years in Denmark.
