RECIPE :

While it's possible to bake the bread in a bread maker, we recommend baking in the oven for the best results and an amazing crust   For Bread Maker See instructions at bottom 

INSTRUCTIONS FOR OVEN:

What you will need:

-1/4 teaspoon (1g) instant dry yeast 

-1 1/4 cups + 1 tablespoon (310ml) cold water

-Dutch Oven or Covered Pot(ø 8"/20cm)

1.Mix the dough. In a large bowl mix together baking mix and yeast. Add water and stir with your hands until blended. The dough will be sticky, which is ok.

2.Let the dough rise. Cover bowl with plastic wrap and let rest for 12 to 24 hrs at room temperature.

3.Shape the dough. Flour a work surface and place dough on it. Fold the outer sides into the center, one side at a time, until a loaf is formed. Place dough in a bowl with parchment paper, let rest for 30 mins, covered, while you preheat the oven.

4.Heat the oven & pot. Place empty covered pot (with lid) in the lower third of the oven and heat to 460˚F (240˚C) for  30 mins.

5.Bake the bread. Remove the empty covered pot from the oven (careful, it’s very hot!). Place the dough and parchment paper into the pot, cover with the lid and bake for 45 mins. Remove the lid for the last 10 minutes for a thicker crust.

For a particularly crispy crust, simply remove the lid 10 minutes before the end of the baking time and finish baking the bread until the desired browning.

INSTRUCTIONS FOR BREAD MAKER :

Preparation in the bread maker: Put 1 cup + 2 tablespoons (260ml) of lukewarm water, 1 teaspoon of lemon juice, 1 tablespoon of maple syrup, 1 1/2 tablespoons of neutral oil, the baking mix and 1 teaspoon of instant dry yeast in the baking container.

Please refer to the instructions for your bread maker for the order of the ingredients. We recommend the White Bread program for the preparation.
