What is Lebkuchen?

Lebkuchen is a soft German spice cake made with honey, nuts and a blend of spices such as cinnamon, cloves, cardamom and ginger. It is usually baked on a thin wafer called Oblate, then glazed with sugar or coated in dark or milk chocolate.

Nuremberg Lebkuchen and Elisenlebkuchen

Nuremberg is the capital of Lebkuchen, and Nürnberger Lebkuchen is a protected name. The finest grade, Elisenlebkuchen, must contain at least 25 percent nuts and no more than 10 percent flour, which makes it moist and rich. Look for Wicklein and Haeberlein-Metzger for the Nuremberg style.

Hearts, Printen and chocolate gingerbread

Beyond the classic rounds, German gingerbread comes as chocolate-coated hearts and stars, filled pieces with apricot or cherry, and Aachener Printen, a firmer gingerbread from Aachen made famous by Lambertz.
