Nürnberger Bratwurst, the Small Sausages of Nuremberg

Nürnberger Bratwurst — also spelled Nuremberger, Nuernberger or Nurnberger, and often sold as Nuremberg brats — are the smallest bratwurst in Germany. Each link is barely the length of a finger: all pork, seasoned with onion and marjoram, and filled into a fine sheep casing that crisps quickly over heat.

Grill or pan-sear them until browned all over, then eat them the Franconian way — three in a hard roll, which Nurembergers call Drei im Weckla — with German mustard, or serve six over sauerkraut. Browse the rest of our German sausages.
